Ingredients

For the Sirniki

500g farmers cheese (or ricotta)
2 large eggs
3 tbsp sweetened condensed milk
1/4 cup all-purpose flour, plus extra for dusting
3 tbsp granulated sugar
1 tsp vanilla extract
A pinch of salt

For the Cooking

3 tbsp vegetable oil
1 tbsp unsalted butter

For the Topping

Additional sweetened condensed milk, for drizzling

Preparing the Batter

Mix cheese and wet ingredients

Combine the farmers cheese, eggs, sweetened condensed milk, sugar, vanilla extract, and salt in a large mixing bowl.

Gradually add the flour, mixing gently until a smooth dough forms.

Shape dough

Sprinkle a clean countertop with flour, turn the dough out onto it, roll into a log, and cut into slices.

Forming the Sirniki

Form patties

Shape each slice into a small patty, about 1/2-inch thick.

Dust with flour

Lightly dust each patty with flour to prevent sticking.

Chill patties

Set aside on a floured surface.

Chill the patties in the fridge for 10 minutes before cooking to help them hold their shape.

Cooking Process

Heat the vegetable oil and butter in a large non-stick skillet over medium heat.

Preheat the skillet over medium heat for about 5 minutes.

Cook the sirniki in batches for about 3-5 minutes on each side, until golden brown.

Don't overcrowd the pan to ensure even cooking. Adjust heat to medium-low if browning too quickly.

Draining

Transfer to a plate lined with paper towels to remove excess oil.

Let rest briefly to remove excess oil.
