Chef’s Tip:

Preparation

Preparing the Dough

1

Combine flour and salt

In a large mixing bowl, combine whole wheat flour and salt.

2

Add oil

Add oil and mix until crumbly.

3

Knead dough

Gradually add water, kneading to form a smooth and pliable dough. Cover and set aside for 30 minutes.

Making the Potato Filling

1

Heat cumin seeds

Heat a pan and add cumin seeds until they sizzle.

2

Mix spices and potatoes

Add mashed potatoes, turmeric, coriander, chili powder, and salt. Mix well.

3

Add herbs and cool

Stir in cilantro and green chili. Allow to cool before forming small balls.

Be sure to cool the potato mixture completely before filling to prevent breaking the dough. You can adjust the spice levels to suit your taste.

Cooking Process

1

Rolling the Paratha

Divide the dough into equal portions, roll each into a small ball, flatten a ball, place a potato mixture ball in the center, and seal the edges.

2

Flattening the Paratha

Gently roll the stuffed dough into a thick circle, ensuring even thickness and minimal filling exposure.

3

Frying the Paratha

Heat a tawa or skillet over medium heat, then cook rolled parathas, adding ghee or oil, until golden brown on both sides.

Never leave hot oil unattended. Keep a lid nearby …
