Ingredients

For the Dough

4 cups all-purpose flour
1 sachet (2 ¼ tsp) instant yeast
1 cup warm water (110°F/45°C)
1/4 cup warm milk
1 tablespoon sugar
1 teaspoon salt

For the Coating

1/2 cup grape molasses
1/2 cup water
1 cup sesame seeds, toasted
Chef’s Tip:

Preparation

Preparing the Dough

1

Activate Yeast

In a large mixing bowl, combine warm water, milk, sugar, and yeast. Let it sit for 5 minutes until foamy.

2

Form the Dough

Add in the flour and salt, then mix until a dough begins to form.

3

Knead Dough

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

Rising the Dough

1

First Rise

Place the dough in a lightly greased bowl, cover with a damp cloth, and let rise for 1 hour or until doubled in size.

⚠ Important: Ensure the dough has doubled in size to achieve the correct texture. 💡 Pro Tip: Toasting sesame seeds beforehand brings out a richer flavor.

2

Preheat Oven

Preheat the oven to 425°F (220°C) and prep a baking sheet with parchment paper.

Cooking Process

1

Shaping

Divide the dough into 8 equal pieces. Roll each piece into a 24-inch rope, twist it, and join the ends to form a ring.

Chef’s Tip: For an extra crunchy crust, let the dipped dough rings air dry slightly before baking.
2

Coating

Mix molasses and water in a shallow dish. Dip each dough ring into the mixture, then coat with sesame seeds.

3

Baking

Place coated rings on the baking sheet and bake for 15 minutes until golden brown.

Never leave hot oil unattended. Keep a lid nearby …
