Ingredients

For the Pikliz

1 small cabbage
thinly sliced
2 large carrots
julienned
1 onion
thinly sliced
2-3 scotch bonnet peppers
chopped
4 cloves garlic
minced
12 allspice berries
whole
1 tbsp salt
adjust to taste
2 cups white vinegar

Preparing the Vegetables

Slice Cabbage and Onion

Thinly slice the cabbage and onion.

Julienne the carrots.

Chop Peppers and Mince Garlic

Chop the scotch bonnet peppers and mince the garlic.

Assembling the Pikliz

Combine Ingredients

In a large mixing bowl, combine all the vegetables and allspice.

Add the salt and mix well to ensure all ingredients are evenly distributed.

Pour Vinegar

Pour white vinegar over the vegetable mixture until fully submerged.

Use gloves when handling scotch bonnet peppers to avoid irritation. For extra flavor, add a few sprigs of thyme to the mixture.

Cooking Process

Thoroughly combine all vegetable ingredients in the bowl.

Transfer the mixture to the sterilized jar, ensuring it's tightly packed, and let it marinate at room temperature for at least 3 hours. Refrigerate thereafter.
