Pumpkin Fritters

500g pumpkin
peeled and cubed
1 cup all-purpose flour
1 large egg
1 tbsp sugar
1 tsp baking powder
Pinch of salt

Cinnamon Sugar Coating

1/2 cup granulated sugar
2 tsp ground cinnamon

Vegetable oil

Preparing the Pumpkin

Place and Cover

Place the cubed pumpkin in a pot and cover with water.

Boil until soft, about 20 minutes.

Drain and mash until smooth.
