Ingredients

For the Dough

All-purpose flour
4 cups
Warm water
1 ½ cups
Active dry yeast
1 packet (2 ¼ tsp)
Olive oil
2 tbsp
Salt
1 tsp

For the Spiced Bean Filling

Kidney beans, cooked and mashed
2 cups
Onion, finely chopped
1 medium
Garlic, minced
3 cloves
Smoked paprika
1 tsp
Ground coriander
½ tsp
Salt and pepper
To taste

For the Egg Wash

Egg, beaten

Marinating the Dough

Dissolve Yeast

In a large bowl, dissolve yeast in warm water and let sit for 5 minutes.

Form the Dough

Add olive oil, salt, and flour; mix until a dough forms.

Knead the Dough

Knead the dough on a floured surface for 8–10 minutes until smooth.

First Rise

Let it rise in a greased bowl, covered, until doubled in size (about 1 hour).

Preparing the Spiced Bean Filling

Sauté Onions

Heat olive oil over medium heat in a pan; add onions and cook until translucent.

Add Spices and Garlic

Stir in minced garlic, paprika, and coriander; cook for another minute.

Add a splash of sherry vinegar to the filling for added depth.

Add mashed beans, mix well, and season with salt and pepper.

Cool the Filling

Remove from heat and cool.

Ensure that the bean mixture is completely cooled before filling the dough.
