3 ripe mangoes
peeled, pitted, and puréed
1 cup heavy cream
chilled
1/4 cup granulated sugar
1 packet unflavored gelatin
(2 1/4 tsp)
1/4 cup water
cold

For the Guava Sauce

1 cup guava juice
2 tbsp cornstarch
2 tbsp sugar
1 tbsp lemon juice

Making the Mango Mousse

Sprinkle the gelatin over the cold water in a bowl and let it bloom for about 5 minutes.
