Preparation
Prepping the Black Beans
Rinse Beans
Rinse the soaked black beans thoroughly.
Heat Oil & Sauté Veggies
In a large pot, heat 2 tablespoons of olive oil over medium heat.
Sauté Vegetables
Sauté the onion, bell pepper, and garlic until the onion is translucent.
Preparing the Orange Mojo
Combine Ingredients
In a small bowl, combine fresh orange juice, lime juice, minced garlic, cumin, and salt.
Whisk in Oil
Gradually whisk in olive oil until well combined.
Rest Mojo
Set aside for flavors to meld.
Cooking Process
Simmering the Soup
Add the rinsed black beans to the sautéed vegetables and cover with vegetable broth. Add bay leaf, cumin powder, and oregano. Simmer for about 1 hour until beans are tender.
Blending for Creaminess
Once cooked, remove 2 cups of the soup and blend until smooth. Stir the blended soup back into the pot for added creaminess.
Finishing with Mojo
Stir in half of the prepared Orange Mojo into the soup just before serving.
