For the Bammy

2 lbs fresh cassava
peeled and grated
1 tsp salt
1 cup water

For the Coconut Milk Soak

1 can (14 oz) coconut milk
1 cup water

For Frying

2 tbsp vegetable oil
2 tbsp butter

Preparing the Cassava

Grate the cassava

Grate the peeled cassava into a large bowl.

Mix and squeeze

Mix in salt and water, then squeeze out excess liquid using a cheesecloth.

Ensure all liquid is squeezed out to avoid a bitter taste.

Form the bammies

Press grated cassava into flat rounds, about 5 inches in diameter and 1/2 inch thick.

Use a mold or plate to shape evenly round bammies.

Cooking Process

Initial Fry

Heat 1 tbsp of oil and butter in a pan over medium heat, then fry bammies for 5 minutes per side until golden.

Maintain medium heat and fry 5 minutes per side.

Coconut Milk Soak

Submerge fried bammies in the coconut milk mixture and soak for 30 minutes.

Soak for 30 minutes.

Final Fry

Heat remaining oil and butter over medium-high heat, then fry soaked bammies for 3 minutes per side until golden.

Use medium-high heat and fry 3 minutes per side.
