2 pounds, peeled and cut into 4-inch pieces

Orange juice
1/3 cup, fresh
Lime juice
1/4 cup, fresh
Salt and pepper

Prepping the Yuca

Peel and Cut Yuca

Peel the yuca and cut it into large pieces.

Boil Yuca

Place the yuca in a large pot of salted water and bring to a boil.

Making the Mojo Sauce

In a small saucepan, heat the olive oil over medium heat.

Add the minced garlic and sauté until fragrant, about 1 minute.

Do not allow the garlic to burn as it may turn bitter.
