Preparing the Quindim Base

Preheat the oven to 350°F (175°C).

In a large mixing bowl, whisk the egg yolks and sugar until pale and creamy.

Using a fine mesh to sift the yolks helps achieve a silkier texture.

Combine remaining ingredients

Incorporate the toasted coconut flakes, melted butter, and vanilla extract, mixing until smooth.

Avoid over-mixing, as it can introduce air bubbles into the mixture.

Preparing the Baking Mold

Generously grease the inside of a fluted tart pan with softened butter.

Cooking Process

Place the tart pan in a water bath and bake in the preheated oven for 50 minutes until the surface is glossy and set, with a slight jiggle in the center.

Baking: 50 minutes; Cooling: 30 minutes. Water Bath: Gentle simmer; Baking: Moderate oven heat (350°F).
