Ingredients

For the Spring Rolls

12 rice paper wrappers
12 large shrimp, peeled and deveined
4 oz rice vermicelli noodles
1/2 cup fresh mint leaves
1/2 cup fresh cilantro leaves
1/2 cup fresh Thai basil leaves
1 medium carrot, julienned
1 small cucumber, julienned
4 lettuce leaves, chopped

For the Dipping Sauce

1/4 cup hoisin sauce
2 tbsp peanut butter, creamy
1 tbsp soy sauce
2 tbsp lime juice
1 red chili, finely chopped
1/4 cup roasted peanuts, crushed

Marinating the Shrimp

Toss Shrimp

Toss shrimp with 1 tbsp of lime juice and a pinch of salt.

Allow to marinate in the refrigerator for 15 minutes.

Rinse Shrimp

Rinse and set aside.

Preparing the Vermicelli Noodles

Soak Noodles

Soak vermicelli noodles in warm water for 10 minutes until softened.

Ensure the noodles are fully drained to prevent soggy rolls.
