Chef’s Tip:

Preparation

Marinating the Pork

1

Combine Marinade

In a bowl, combine vinegar, garlic, soy sauce, fish sauce, chili pepper, sugar, and black pepper.

2

Add Pork to Marinade

Place the pork pieces in a shallow dish and pour the marinade over.

3

Refrigerate

Cover the dish and refrigerate for at least 1 hour.

Do not over-marinate; the vinegar can toughen the meat if left too long.

4

Pro Tip

Add a touch of lime juice to cut through the richness of the pork.

Preparing the Grilled Vegetables

1

Preheat Grill

Preheat the grill to medium-high heat.

2

Season Vegetables

Brush the vegetables with olive oil and season with salt and pepper.

3

Set Aside

Set them aside while the grill heats.

Cooking Process

1

Grill Pork

Remove the pork from the marinade and grill for 10-12 minutes on each side until cooked through and slightly charred.

2

Grill Vegetables

Grill the prepared vegetables for 2-3 minutes on each side until tender and lightly charred.

3

Rest Pork

Let the grilled pork rest for 5 minutes before slicing.

Never leave hot oil unattended. Keep a lid nearby …
