Ingredients

For the Stew Base

1 lb oxtail
cut into pieces
1 lb pork hock
sliced
5 cups water
1 large onion
quartered
2 cloves garlic
crushed
1 bay leaf

For the Vegetables

1 cup banana hearts
cleaned and sliced
1 cup eggplant
sliced
1 cup green beans
trimmed and halved
1 bunch water spinach (kangkong)
ends trimmed

For the Peanut Sauce

1 cup ground peanuts or peanut butter
1 cup beef broth
from the stew
2 tablespoons rice flour
dissolved in 1/4 cup water
Salt and pepper
to taste

For the Shrimp Paste Sauté

2 tablespoons shrimp paste
bagoong
1 tablespoon oil
1 clove garlic
minced
