Pork shoulder
1 kg, cubed
Sweet paprika
2 tbsp
Hot paprika
1 tbsp
Garlic
2 cloves, minced
Olive oil
1/4 cup
Salt and pepper

For the Stew

Onions
2 large, finely chopped
Carrots
2, sliced
Potatoes
2, cubed
Red bell pepper
1, chopped
Green bell pepper
1, chopped
Tomatoes
2, peeled and diced
Beef stock
4 cups
Bay leaves

For the Finishing Touch

Fresh parsley
1/4 cup, chopped
Apple cider vinegar
1 tbsp
Chili flakes

Marinating the Pork

Combine Ingredients

In a bowl, combine cubed pork with sweet and hot paprika, garlic, olive oil, salt, and pepper.

Mix Well

Mix well to coat the pork evenly.

Chill

Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

Ensure all meat is properly marinated for optimal flavor infusion.

Preparing the Vegetables

Chop Veggies

Prepare all vegetables: chop onions, slice carrots, cube potatoes, and chop bell peppers.

Dice Tomatoes

Peel and dice tomatoes.

Set aside, keeping each ingredient separate.

Dice vegetables uniformly for even cooking.

Cooking Process

Brown the Pork

In a large pot, sauté marinated pork cubes over medium-high heat until nicely browned. Remove and set aside.

Use medium-high heat for a deep sear.

Sauté the Vegetables

In the same pot, add onions, carrots, and bell peppers. Sauté until onions are translucent.

Simmer the Stew

Return pork to the pot, add tomatoes, and pour in beef stock. Add bay leaves, and let simmer on low heat for 2 hours.

Simmer on low heat to allow flavors to meld.
