Chef’s Tip:

Preparation

Preparing the Broth

1

Char onion and ginger

Char the onion and ginger by placing them under a broiler until slightly blackened.

2

Simmer chicken

In a large pot, combine the chicken, charred onion, ginger, and water. Bring to a boil, then reduce to a simmer.

Adding chicken bones enhances the broth’s richness.

3

Skim broth

Skim the broth regularly to remove impurities that rise to the surface.

Preparing the Aromatics

1

Toast aromatics

In a dry pan, toast the cinnamon sticks, star anise, cloves, and coriander seeds over medium heat until fragrant.

Toasting the spices before adding them to the broth deepens their flavors and enhances the overall aroma.

2

Add to broth

Add the aromatics to the simmering broth.

3

Season and simmer

Season the broth with fish sauce, salt, and sugar. Let simmer for at least 1 hour.

Ensure you strain the broth well to remove all traces of bones and spices.

Cooking Process

1

Straining the Broth

Follow correct straining methods to achieve a clear broth.

2

Noodle Preparation

Cook the rice noodles as per the package instructions until just tender.

3

Assemble and Serve

Divide the noodles into bowls and pour the hot broth over them.

Never leave hot oil unattended. Keep a lid nearby …
