Ingredients

For the Noodles

200g glass noodles
1 tablespoon sesame oil

For the Vegetables

1 medium carrot
julienned
1 cucumber
thinly sliced
1 cup bean sprouts

For the Dressing

3 tablespoons fish sauce
2 tablespoons lime juice
freshly squeezed
1 tablespoon sugar
2 cloves garlic
minced
1 red chili
finely chopped

For the Garnish

1/2 cup roasted peanuts
roughly chopped
1/2 cup fresh cilantro leaves
1/4 cup mint leaves
