For the Kebab

500g ground lamb or beef
1 small onion, grated
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
Salt and black pepper, to taste

For the Sumac Onions

1 large red onion, thinly sliced
1 tablespoon sumac
Juice of 1 lemon
1 tablespoon olive oil
Pinch of salt

For the Yogurt Sauce

1 cup plain Greek yogurt
1 clove garlic, minced
2 tablespoons fresh dill, chopped
Salt and pepper, to taste

For the Wraps

4 large flatbreads or Lavash
8 lettuce leaves
2 tomatoes, sliced
1 cucumber, sliced

Marinating the Kebab

Combine ground lamb or beef, grated onion, minced garlic, cumin, coriander, smoked paprika, salt, and black pepper in a bowl.
