Butternut squash
2 cups, peeled and cubed
Olive oil
1 tablespoon
Feta cheese
1 cup, crumbled
Mint leaves

Black pepper

Phyllo dough
1 package (approximately 20 sheets)
Melted butter
1/2 cup
Olive oil
1/4 cup

Large egg

Preparation


Roasting the Butternut Squash

Preheat oven

Preheat the oven to 400°F (200°C).

Toss squash

Toss the cubed butternut squash with olive oil, salt, and pepper.

Roast squash

Spread on a baking sheet and roast for 25-30 minutes until tender.

Preparing the Filling

Cool squash

Allow roasted squash to cool slightly before transferring to a large mixing bowl.

Combine ingredients

Add crumbled feta and chopped mint, gently mix to combine.

Set aside to cool completely.

Lay out a sheet of phyllo, brush with butter, repeat with 4 more layers.
