4 boneless chicken thighs
2 tbsp dark rum
1 lime
juiced
1 tsp ground allspice
1 tsp garlic powder
Salt and pepper to taste

1 tbsp coconut oil
1 onion
chopped
2 cloves garlic
minced
1 tsp fresh ginger
grated
1 red bell pepper
sliced
1 green chili
seeded and sliced

For the Curry Sauce

1 cup coconut milk
2 cups fresh pineapple
cubed
1 tbsp curry powder
2 tsp ground turmeric
1 tbsp brown sugar
Salt to taste

For the Finish

1/4 cup fresh cilantro
chopped
1 lime
cut into wedges

Marinating the Chicken

Combine ingredients

In a bowl, combine chicken thighs with rum, lime juice, allspice, garlic powder, salt, and pepper.

Mix well to coat the chicken evenly and marinate for at least 30 minutes or overnight in the refrigerator.
