Preparation
Marinating the Beef
Season the beef
Season beef cubes generously with salt and pepper.
Heat the oil
Heat olive oil in a large pot over medium-high heat.
Sear the beef
Sear the beef in batches until browned on all sides. Remove and set aside.
Preparing the Stew Base
Sauté the vegetables
In the same pot, add onions, garlic, carrots, and celery. Sauté until onions are translucent.
Avoid crowding the pot while browning the beef to prevent steaming. Deglaze the pot with a splash of beef stock to incorporate all the flavors.
Add tomato paste
Stir in tomato paste and cook for another 2 minutes.
Combine and simmer
Add the browned beef back into the pot, pour in beef stock, Guinness, and bay leaves. Bring to a boil.
Cooking Process

Reduce heat to low, cover, and simmer for 2½ hours until beef is tender.
Caramelizing the Shallots
In a skillet, melt butter over low heat, add shallots and brown sugar, sauté slowly until caramelized.
Making the Mashed Potatoes
Boil potatoes until fork-tender, drain, then mash with butter and cream, and season with salt and pepper.
