Preparation
Marinating the Chicken

In a bowl, combine the tamarind paste, brown sugar, soy sauce, ginger, and garlic.
Season the chicken
Season chicken breasts with salt and pepper.
Marinate
Pour marinade over the chicken and refrigerate for at least 30 minutes.
Ensure the chicken is properly refrigerated while marinating.
Preparing the Mango Relish
Combine ingredients
In a small bowl, combine the diced mango, red onion, lime juice, cilantro, and jalapeño.
Mix and chill
Mix well and refrigerate until ready to use.
For more heat, leave the seeds in the jalapeño.
Adjust seasoning
Adjust seasoning with salt and pepper if needed.
Cooking Process
