Chef’s Tip:

Preparation

Marinating the Pork

1

Combine Marinade Ingredients

In a bowl, combine pineapple juice, brown sugar, soy sauce, garlic, salt, and pepper.

2

Marinate Pork

Add the pork slices to the marinade, ensuring each piece is well-coated.

Ensure the pork is completely submerged in the marinade for thorough flavor absorption.

3

Refrigerate

Cover and refrigerate for at least 4 hours, preferably overnight.

For best results, allow the tocino to marinate overnight.

Preparing the Garlic Fried Rice

1

Heat Oil

Heat vegetable oil in a pan over medium heat.

2

Sauté Garlic

Add chopped garlic and sauté until golden brown.

3

Fry Rice

Add the rice, breaking up any clumps, and stir-fry until heated through. Season with salt and soy sauce.

Use day-old rice for the best texture in fried rice.

Cooking Process

1

Cooking the Tocino

Heat a non-stick pan over medium heat. Arrange marinated pork in a single layer, cook until browned on one side, then flip and cook until fully caramelized and cooked through.

2

Preparing Garnish

Arrange sliced cucumber and spring onions on a serving plate.

3

Frying the Rice

After the tocino is cooked, use the remaining oil in the pan to quickly fry the rice for added flavor.

Never leave hot oil unattended. Keep a lid nearby …
