Ingredients

For the Marinade

4 boneless, skinless chicken breasts
3 tablespoons fresh lime juice
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper

For the Mango Salsa

1 large ripe mango, peeled and diced
1 small red onion, finely chopped
1 jalapeño, seeded and minced
Juice of 1 lime
2 tablespoons fresh cilantro, chopped
1/4 teaspoon salt

For Cooking

1 tablespoon olive oil

Marinating the Chicken

In a bowl, combine lime juice, olive oil, garlic, cumin, smoked paprika, salt, and pepper.

Marinate the Chicken

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them.

Do not marinate the chicken at room temperature to prevent bacterial growth.

Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight.

For a deeper flavor, marinate the chicken overnight.

Preparing the Mango Salsa

Cooking Process
