Ingredients

For the Vegetable Mixture

2 large bell peppers
chopped
3 medium tomatoes
peeled and diced
1 large onion
finely chopped
3 cloves garlic
minced

For the Creamy Sauce

200g feta cheese
crumbled
100ml heavy cream
1 tbsp all-purpose flour
1 tsp paprika

For the Seasoning

Salt
to taste
Black pepper
to taste
2 tbsp olive oil

Marinating the Vegetables

Combine ingredients

In a large bowl, combine bell peppers, tomatoes, onion, and garlic.

Season vegetables

Drizzle with olive oil and sprinkle with salt and pepper.

Toss well to combine, and let sit for 15 minutes.

Preparing the Creamy Sauce

Whisk sauce

In a separate bowl, whisk together cream, flour, and paprika until smooth.

Add feta

Gently fold in the crumbled feta.

Set aside

Set aside while prepping the vegetable mixture.

Do not over-salt as feta is naturally salty. Pro Tip: Use a nonstick skillet to prevent sticking during cooking.

Cooking Process

Heat olive oil in a skillet over medium heat. Add the marinated vegetables, and sauté until tender, around 10 minutes.

Lower the heat, stir in the creamy sauce with the sautéed vegetables, and cook for an additional 5 minutes until combined.

Bake The Mixture

Transfer everything into an oven-safe dish and bake at 180°C (350°F) for 20 minutes until bubbly and slightly golden on top.
