For the Rösti

6 medium waxy potatoes
peeled
3 tbsp butter
unsalted
1/2 tsp salt
1/4 tsp black pepper
freshly ground

For the Bacon & Apple Mix

6 slices bacon
diced
2 medium apples
peeled, cored, and thinly sliced
1 tbsp lemon juice
1 tbsp honey

For the Topping

1/4 cup sour cream
2 tbsp fresh chives
chopped

Preparing the Potatoes
