For the Rösti

6 medium waxy potatoes

peeled

3 tbsp butter

unsalted

1/2 tsp salt

1/4 tsp black pepper

For the Bacon & Apple Mix

6 slices bacon

diced

2 medium apples

peeled, cored, and thinly sliced

1 tbsp lemon juice

1 tbsp honey

For the Topping

1/4 cup sour cream

2 tbsp fresh chives

chopped

Salt and pepper to taste

Preparation

Preparing the Potatoes

Grate the Potatoes

Grate the potatoes using the large holes of a box grater.

Remove Moisture

Place the grated potatoes in a clean cloth and squeeze out as much moisture as possible.

Season

Season with salt and pepper, then set aside.

Cooking the Bacon & Apples

Cook the Bacon
