Ingredients

For the Crust

1 cup all-purpose flour
1/4 cup caster sugar
1/2 cup unsalted butter, chilled and cubed
1 egg yolk
1 tablespoon cold water

For the Filling

4 cups whole milk
2/3 cup sugar
2 tablespoons all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon salt
2 eggs, lightly beaten
2 teaspoons vanilla extract
1 tablespoon butter

For the Spice Topping

1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Making the Crust

In a bowl, combine flour and caster sugar until evenly mixed.

Add chilled butter and rub into the flour mixture until it resembles breadcrumbs.

Mix in the egg yolk and cold water until the dough forms. Wrap in plastic and refrigerate for 30 minutes.

Preparing the Filling

Heat the milk in a saucepan until just about to boil.

In a bowl, mix sugar, flour, cornstarch, and salt. Gradually whisk in the hot milk.

Return mixture to the saucepan and cook over medium heat until thickened. Stir in eggs, vanilla, and butter.

⚠ Do not allow the milk mixture to boil after adding the eggs to avoid curdling.

Cooking Process
