2 cups cloudberries
fresh or frozen
1/3 cup granulated sugar
1 tbsp lemon juice
1 cup heavy cream
1 tbsp powdered sugar
1 tsp vanilla extract

1 cup all-purpose flour
1/2 cup unsalted butter
softened
1/4 cup confectioners' sugar

Preparing the Cloudberry Compote

Combine cloudberries, granulated sugar, and lemon juice in a saucepan.

Simmer over medium heat for about 10 minutes, until berries are soft.

Allow to cool completely before folding into cream.

Making the Shortbread Crumble
