Ingredients

For the Burgers

500g ground beef
1 cup canned black beans
rinsed and mashed
1 small onion
finely chopped
2 cloves garlic
minced
2 tbsp fresh parsley
chopped
1 tsp ground cumin
Salt and pepper
to taste

For the Olive Tapenade

1 cup pitted black olives
2 tbsp capers
3 tbsp olive oil
Juice of 1 lemon
1 clove garlic

For the Burger Assembly

4 burger buns
1 cup leafy greens
e.g., lettuce or arugula
1 large tomato
sliced

For the Toppings

1 small red onion
thinly sliced
4 slices of Monterrey Jack cheese

Preparing the Olive Tapenade

Add olives, capers, garlic, lemon juice, and olive oil to a food processor.

Pulse until the mixture is finely chopped but still has some texture.

Preparing the Burger Patties
