Ingredients

For the Duck Marinade

4 duck breasts
skin on
4 cloves garlic
minced
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon brown sugar
1 teaspoon chili flakes

For the Tamarind Sauce

3 tablespoons tamarind paste
2 tablespoons palm sugar
2 tablespoons fish sauce
1/2 cup chicken stock
1 red chili
finely chopped
Juice of 1 lime

For the Stir-Fry

2 tablespoons vegetable oil
1 large onion
sliced
1 red bell pepper
sliced
1 cup snap peas
1/2 cup fresh basil leaves

For Serving

Cooked jasmine rice

Marinating the Duck

Mix Marinade Ingredients

In a bowl, mix the garlic, soy sauce, fish sauce, brown sugar, and chili flakes.

Marinate the Duck

Rub the marinade over the duck breasts and leave to marinate in the fridge for at least 1 hour.

For more intense flavors, marinate overnight.

Bring the duck to room temperature before cooking.

Preparing the Tamarind Sauce

In a small pot, combine the tamarind paste, palm sugar, fish sauce, chicken stock, red chili, and lime juice.
