Ingredients

For the Noodles

300g fresh Chinese wheat noodles
Water
for boiling

For the Chili Oil

1 cup vegetable oil
1/4 cup Szechuan peppercorns
1/2 cup dried chili flakes
2 garlic cloves
minced

For the Pork Topping

250g ground pork
2 tbsp soy sauce
1 tbsp Shaoxing wine
1 tbsp Szechuan peppercorns
toasted and ground
2 spring onions
chopped

For the Sauce

2 tbsp Chinese sesame paste or tahini
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sugar

Marinating the Pork

Combine pork and seasonings

In a bowl, combine ground pork with soy sauce, Shaoxing wine, and ground Szechuan peppercorns.

Mix until well incorporated and let marinate for 15 minutes.

Cooking the Noodles

Boil water

Boil water in a large pot.

Cook noodles

Cook noodles according to package instructions until al dente, then drain and set aside.
