Ingredients

For the Marinade

Chicken Breast
1 lb — diced
Soy Sauce
2 tbsp
Ginger Paste
1 tbsp
Garlic Paste
1 tbsp
Turmeric Powder
1 tsp
Paprika
1 tsp

For the Soup Base

Vegetable Oil
2 tbsp
Onion
1 large — thinly sliced
Garlic
3 cloves — minced
Ginger
1 inch — grated
Green Chilies
2 — diced
Carrot
1 — julienned
Bell Pepper
1 small — sliced
Chicken Broth
6 cups
Salt & Pepper
to taste

For the Noodles

Rice Noodles
8 oz
Boiling Water

Garnishes

Fresh Cilantro
chopped
Lime Wedges
Green Onions
sliced

Preparation


Marinating the Chicken

Combine Marinade

In a bowl, combine the chicken, soy sauce, ginger paste, garlic paste, turmeric powder, and paprika.

Mix Well

Mix well to coat the chicken pieces evenly with the marinade.

Refrigerate

Cover and refrigerate for at least 30 minutes, or overnight for best results.

Best if marinated overnight for deeper flavor.

Preparing the Soup Base

Heat Oil

Heat oil in a large pot over medium heat.

Add the onion, garlic, and ginger, and sauté until the onions are translucent.

Add Vegetables

Stir in the green chilies, carrots, and bell pepper, and cook for another 5 minutes.

Add the chicken broth to the pot, bring to a boil, then reduce to a simmer.

Add marinated chicken to the pot, simmer for 15-20 minutes until fully cooked.
