Ingredients

For the Marinade

2 lbs zebu meat
cut into large cubes
3 cloves garlic
minced
1 tbsp fresh ginger
grated
1 tsp smoked paprika
1 tsp cayenne pepper
Juice of 2 limes
2 tbsp olive oil
Salt and black pepper
to taste

For the Tomato Ginger Salsa

3 ripe tomatoes
diced
1 small red onion
finely chopped
1 tbsp fresh ginger
minced
1 handful fresh cilantro
chopped
Juice of 1 lemon
Salt and black pepper
to taste

For the Cooking

2 tbsp vegetable oil
1 cup beef stock
1 tbsp tomato paste

Marinating the Zebu

Combine Marinade Ingredients

In a large bowl, combine garlic, ginger, smoked paprika, cayenne pepper, lime juice, olive oil, salt, and black pepper.

Add Zebu to Marinade

Add the zebu cubes and coat them thoroughly with the marinade.

Refrigerate Zebu

Cover and refrigerate for at least 2 hours or overnight.

For best results, marinate overnight to infuse maximum flavor; do not skip this step for optimal tenderness.

Preparing the Salsa

Combine Salsa Ingredients

In another bowl, combine the diced tomatoes, red onion, ginger, and cilantro.

Drizzle with lemon juice and season with salt and pepper.

Mix well and refrigerate until serving.

Cooking Process

Heat vegetable oil in a large, heavy-bottomed skillet over medium-high heat. Sear the zebu cubes until browned on all sides, about 5–7 minutes.

Use medium-high heat for optimal browning.

Reduce heat to medium, add beef stock and tomato paste to the skillet, and stir to combine. Cover and let simmer for about 1 hour, stirring occasionally.

Maintain medium heat for gentle simmering.

Just before serving, give the salsa a final stir, adjusting seasoning if necessary.
