Ingredients

For the Bhaji

2 tablespoons oil
1 tablespoon butter
1 cup finely chopped onions
1 cup chopped tomatoes
2 cups boiled potatoes, peeled and mashed
1 cup boiled peas
1 cup boiled and mashed cauliflower
1 teaspoon cumin seeds
2 tablespoons Pav Bhaji masala
1 teaspoon red chili powder
Salt to taste
2 tablespoons chopped cilantro for garnish

For the Buttered Rolls

8 medium-sized pav (soft bread rolls)
3 tablespoons butter
1 teaspoon Pav Bhaji masala

Preparing the Bhaji

Heat oil and butter

Heat oil and butter in a large pan over medium heat.

Add cumin seeds

Add cumin seeds, allowing them to sizzle.

Sauté onions

Stir in onions and sauté until golden brown.

Cook tomatoes

Add tomatoes and cook until soft and oil starts to separate.

Add spices

Incorporate Pav Bhaji masala and red chili powder, and sauté for 2 minutes.

Adjust spice levels by adding more or less red chili powder.

Mix vegetables

Add mashed vegetables and mix well, cooking for another 10 minutes while mashing further.

Simmer

Adjust consistency with water if too thick; simmer for 20 minutes.

Do not let the bhaji stick to the bottom; stir frequently.

Season and garnish

Season with salt and garnish with cilantro.

Split pav rolls in half, spread with butter, and sprinkle with Pav Bhaji masala. Toast on a hot griddle until golden and crisp.
