2 lbs goat meat
cut into chunks
2 tbsp curry powder
1 tbsp ground allspice
4 cloves garlic
minced
1 inch ginger
grated
1 tsp salt
1 tsp black pepper

2 tbsp vegetable oil
1 large onion
chopped
3 scallions
chopped
2 fresh thyme sprigs
2 scotch bonnet peppers
whole
1 tbsp tomato paste
2 cups coconut milk
2 cups chicken stock
2 potatoes
peeled and cubed
1 carrot
sliced

Marinating the Goat

In a large bowl, combine the goat meat with curry powder, allspice, garlic, ginger, salt, and pepper.

Mix thoroughly and cover.
