For the Chicken Adobo

1 kg chicken thighs and drumsticks
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup apple cider vinegar
1/4 cup pineapple juice
from canned pineapples
1 medium onion
sliced
4 cloves garlic
minced
2 bay leaves
1/2 tsp black peppercorns
whole
1/2 tsp ground black pepper
1 tbsp olive oil

For the Pineapple Integration

1 cup pineapple chunks
canned or fresh
1 red bell pepper
sliced
1 green bell pepper
sliced
1 tbsp brown sugar

For Garnishing

Fresh parsley
chopped

Marinating the Chicken

In a large bowl, combine soy sauce, white vinegar, apple cider vinegar, pineapple juice, sliced onion, garlic, bay leaves, and black peppercorns.

Cover and marinate in the refrigerator for at least 30 minutes or overnight for best flavor.

Do not exceed 24 hours in marination as it may alter the texture of the chicken.

Preparing the Pineapple Mix

Add pineapple chunks and both sliced peppers, sauté until tender.

Cooking Process

Pour marinade into the pan. Bring to a boil, then reduce to simmer. Cover and cook for 45-60 minutes.

Searing Chicken: 5-7 minutes on medium-high; Simmering: 45-60 minutes on medium-low.
