Chef’s Tip:

Preparation

Marinating the Ham

1

Mix ham, butter, onion, and garlic

Mix the ham, butter, onion, and garlic in a large bowl.

2

Add spices

Add the ground thyme, nutmeg, and allspice until evenly coated.

3

Marinate ham

Allow to marinate for at least 1 hour in the refrigerator.

Preparing the Potato Mixture

1

Grate and dry potatoes

Grate the potatoes and immediately squeeze out excess moisture using a cheesecloth.

Ensure that all moisture is removed from the potatoes to prevent a soggy pie. Pro Tip: Grating the potatoes directly into water prevents discoloration.

2

Heat stock

Heat the chicken stock, salt, and white pepper until boiling.

3

Combine potatoes and stock

Gradually stir the hot stock into the potatoes for a smooth consistency.

Cooking Process

1

Layer the base

Spread half of the potato mixture evenly in a greased baking dish.

2

Add ham layer

Layer the marinated ham mixture evenly on top of the potato base.

3

Top the pie

Cover with the remaining potato mixture and brush with melted butter.

4

Bake

Bake at 375°F (190°C) for 1 hour and 15 minutes.

5

Broil

Broil on high for the final 5 minutes to achieve a golden top.

Never leave hot oil unattended. Keep a lid nearby …
