Ingredients

For the Lamb Kebabs

Boneless lamb shoulder
1.5 lbs, cut into 1-inch cubes
Garlic
2 cloves, minced
Fresh lemon juice
1 tbsp
Olive oil
1/4 cup
Ground cumin
1 tsp
Smoked paprika
1 tsp
Ground coriander
1/2 tsp
Salt and black pepper
To taste

For the Tzatziki Sauce

Greek yogurt
1 cup
Cucumber
1/2, grated and drained
Garlic
1 clove, minced
Fresh lemon juice
1 tbsp
Olive oil
1 tbsp
Fresh dill
1 tbsp, chopped
Salt
To taste

For the Skewers

Red bell pepper
1, cut into 1-inch pieces
Yellow bell pepper
1, cut into 1-inch pieces
Red onion
1, cut into wedges

For the Garnishes

Fresh parsley
Chopped
Lemon wedges

Preparation


Marinating the Lamb

Combine ingredients

In a large bowl, combine the garlic, lemon juice, olive oil, cumin, smoked paprika, coriander, salt, and black pepper.

Add lamb

Add the lamb cubes, tossing well to coat.

Chill

Cover and refrigerate for at least 2 hours, preferably overnight.

Chef’s Tip: Let the lamb marinate overnight for maximum flavor.

Preparing the Tzatziki Sauce

Mix ingredients

In a medium bowl, mix the Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt.

Ensure the cucumber is well-drained to avoid a watery sauce.

Grate the cucumber on a cheesecloth and squeeze out the excess moisture before adding it to the yogurt.

Cooking Process
