Ingredients

For the Beef Anticucho Marinade

1 ½ lbs beef heart or sirloin
cut into 1-inch cubes
4 tbsp aji panca paste
Peruvian red pepper paste
3 cloves garlic
minced
2 tbsp red wine vinegar
preferably Peruvian
1 tsp ground cumin
1 tsp oregano
dried
½ tsp salt
½ tsp black pepper

For the Chimichurri Sauce

1 cup fresh parsley
finely chopped
½ cup fresh cilantro
finely chopped
2 cloves garlic
minced
1 red chili
deseeded and finely chopped
½ cup olive oil
2 tbsp red wine vinegar
1 tsp salt
¼ tsp black pepper

For the Skewers

Wooden or metal skewers
soaked if wooden
1 red bell pepper
cut into 1-inch pieces
1 red onion
cut into wedges

For the Garnish

Fresh lime wedges
Fresh cilantro sprigs

Marinating the Beef Anticuchos

In a large bowl, combine aji panca, minced garlic, red wine vinegar, cumin, oregano, salt, and pepper.
