Ingredients

For the Rendang Beef

Beef chuck
2 lbs, diced into 1-inch cubes
Coconut milk
1 cup
Rendang curry paste
2 tbsp
Kaffir lime leaves
3 leaves
Ginger
1-inch, grated
Salt
To taste

For the Spicy Coconut Sauce

Coconut cream
1 cup
Sambal oelek
1 tbsp
Lime
1, juiced
Salt & pepper
To taste

For the Taco Assembly

Corn tortillas
8 small
Red onion
1, thinly sliced
Fresh cilantro
½ cup, chopped
Avocado
1, sliced

For Garnishing

Lime wedges
Red chili slices

Preparation


Marinating the Rendang Beef

Combine ingredients

In a bowl, combine the beef cubes with rendang curry paste, ginger, and kaffir lime leaves.

Add coconut milk and salt

Stir in the coconut milk and a pinch of salt.

Marinate

Cover and refrigerate for at least 2 hours, preferably overnight.

Let the beef marinate overnight for deeper flavor absorption.

Preparing the Spicy Coconut Sauce

Whisk coconut cream and sambal

In a small saucepan over low heat, whisk coconut cream with sambal oelek.

Add lime and season

Add lime juice, and season with salt and pepper to taste.

Taste the sauce before serving and balance the flavors as needed.

Simmer for 5 minutes and set aside to cool.

Avoid boiling the coconut cream to prevent separation.
