Ingredients

For the Broth

8 cups chicken broth
1 lemongrass stalk
Cut into 2-inch pieces and smashed
3 kaffir lime leaves
4 slices fresh ginger
2 tablespoons fish sauce
Salt
to taste

For the Noodles

2 cups rice flour
1 cup tapioca flour
1 cup boiling water

For the Chicken

2 chicken breasts
boneless
1 tablespoon soy sauce
1 teaspoon vegetable oil

For Garnishing

1 cup bean sprouts
1/2 cup green onions
chopped
1/2 cup cilantro
chopped
1 lime
cut into wedges
1 fresh chili
sliced

Marinating the Chicken

Slice the chicken breasts

Slice the chicken breasts into thin strips.

Combine marinade

Combine with soy sauce and vegetable oil in a bowl.

Marinate

Allow to marinate in the fridge for at least 30 minutes.

Preparing the Noodles

Mix the flours

Mix rice flour and tapioca flour in a large bowl.

Add boiling water

Gradually add boiling water while stirring to form a dough.

Knead and rest the dough

Knead for about 5 minutes until smooth, allow to rest for 15 minutes.

Knead the noodle dough well to achieve perfect chewiness.

Cooking Process

Simmering the Broth

Bring the chicken broth to a boil, then add lemongrass, kaffir lime leaves, ginger, fish sauce, and salt. Simmer for 1 hour.

Use low heat during simmering.

Cooking the Chicken

In a separate pan, sauté the marinated chicken until fully cooked.

Ensure the chicken is fully cooked before serving. Use medium heat.

Roll out the dough and cut into strips. Boil in a large pot until they float to the surface, about 3-5 minutes.

Cook on medium-high heat for 3-5 minutes.
