Ingredients

For the Porridge

1 cup Jasmine rice
rinsed
6 cups chicken broth
1 teaspoon freshly grated turmeric
1 stalk lemongrass
bruised
2 cups water spinach or regular spinach
chopped
1 cup sweet corn kernels

For the Tuna Topping

1 lb tuna steak
cut into bite-sized pieces
1 tablespoon soy sauce
1 tablespoon lime juice
½ teaspoon black pepper

For the Aromatics

2 tablespoons vegetable oil
3 cloves garlic
minced
2 shallots
sliced thinly

For the Garnish

Fresh basil leaves
to taste
Fried shallots
to taste
Red chillies

Marinating the Tuna

Combine the tuna pieces with soy sauce, lime juice, and black pepper in a bowl.

Preparing the Porridge

In a large pot, combine the rinsed rice, chicken broth, turmeric, lemongrass, and sweet corn.

Bring to a boil, then reduce heat to simmer for approximately 40 minutes until the rice breaks down.

Remove the lemongrass stalk before serving.
