In a bowl, combine soy sauce, oyster sauce, fish sauce, sugar, white pepper, and minced garlic.
Marinate the Chicken
Add chicken pieces to the marinade and mix well to ensure all pieces are coated.
Refrigerate
Cover and refrigerate for at least 1 hour for flavors to meld.
Preparing the Dipping Sauce
Heat and Mix
In a small pan over low heat, mix tamarind paste, palm sugar, fish sauce, chili flakes, and minced garlic.
Dissolve Sugar
Stir until sugar is dissolved and the sauce is well combined.
Cool and Set Aside
