2 tbsp lemongrass
finely chopped
1-inch piece of ginger
peeled and sliced
3 garlic cloves
2 shallots
chopped
1 tsp turmeric powder
1 tbsp coriander seeds
toasted

Coconut Curry

1 lb chicken thighs
boneless and skinless, cut into pieces
2 cups coconut milk
3 tbsp vegetable oil
1 tbsp fish sauce
2 tsp sugar
2 cups chicken broth

Noodles

12 oz egg noodles
1-in piece fresh ginger
sliced
1 tbsp oil
for frying

Garnish

1/2 cup fresh cilantro
chopped
1 fresh lime
cut into wedges
1 shallot
thinly sliced
1/4 cup pickled mustard greens
