Chef’s Tip:

Preparation

Marinating the Beef

1

Combine ingredients

In a large bowl, combine beef, lime juice, garlic, salt, and pepper.

2

Marinate

Mix well and let it marinate for at least 30 minutes in the refrigerator.

For deeper flavor, prepare the soup base a day ahead to let the spices meld.

3

Temper

Remove from fridge and let it come to room temperature before cooking.

Preparing the Vegetables

1

Prep pumpkin or squash

Peel and cube the pumpkin or squash.

2

Chop vegetables

Slice carrots and chop the onion.

3

Mince garlic

Mince garlic for the soup base.

Cooking Process

1

Browning the Beef

Sear marinated beef in olive oil over medium-high heat until browned on all sides.

2

Building the Soup Base

Add onions, garlic, and carrots to the pot, sautéing until onions are translucent.

3

Simmering the Soup

Add pumpkin, water or broth, spices, and whole Scotch Bonnet pepper to the pot with beef. Simmer on low heat for 1.5 hours or until beef is tender.

Ensure Scotch Bonnet pepper stays whole or flavor may become overpoweringly spicy. Pro Tip: Toast spices briefly in a dry pan to release their flavors before adding them to the soup.

Never leave hot oil unattended. Keep a lid nearby …
