Ingredients

For the Vegetable Medley

1 medium eggplant, diced
1 zucchini, sliced into half-moons
1 red bell pepper, diced
1 yellow onion, finely chopped
2 cloves garlic, minced

For the Soup Base

4 cups vegetable broth
1 cup tomato puree
1 tablespoon tomato paste
1 teaspoon dried lavender petals
2 tablespoons olive oil

For the Seasoning

Salt, to taste
Black pepper, freshly ground, to taste
1 teaspoon Herbes de Provence
1 bay leaf

For the Garnish

Fresh basil leaves, for serving
Drizzle of extra virgin olive oil

Prepping the Vegetables

Dice and Salt Eggplant

Dice the eggplant and sprinkle salt over it. Set aside for 15 minutes to draw out moisture.

Rinse and Dry Eggplant

Rinse and dry the eggplant cubes with a clean towel.

Prepare Remaining Vegetables

Slice the zucchini, dice the red bell pepper, and chop the onion and garlic.

Preparing the Soup Base

Heat Oil and Sauté Onions

In a large pot, heat olive oil over medium heat. Add onions and cook until translucent, about 5 minutes.

Use a high-quality olive oil to enhance the richness of the vegetables.
