trimmed and washed
2 medium potatoes
peeled and cut into cubes
1 large onion
finely chopped
2 carrots
sliced
4 cloves garlic
minced

400g canned tomatoes
crushed or chopped
2 tablespoons tomato paste
100ml vegetable broth or water
1 bay leaf
Salt and pepper
to taste

For the Olive Oil Infusion

100ml extra virgin olive oil
1 teaspoon dried oregano
Juice of 1 lemon

Preparing the Vegetables

Trim and wash the green beans.
