Potatoes
2 lbs (1 kg), peeled and quartered
Kale
1 lb (450 g), chopped
Butter
4 tbsp
Milk
1/2 cup (120 ml)
Salt & Pepper
to taste

For the Sausage

Smoked Sausage
1 lb (450 g)
Olive Oil
1 tbsp

For the Spice Blend

Nutmeg
1 tsp
Ground Thyme
1/2 tsp

For the Onion Topping

Onion
1 large, thinly sliced
Butter
2 tbsp
Sugar
1 tbsp

Preparation


Preparing the Stamppot

Boil Potatoes

Boil the potatoes in a large pot of salted water until tender, about 25 minutes.

Add Kale

In the last 10 minutes of cooking the potatoes, add the chopped kale to the pot.

Mash Together

Drain the potatoes and kale, then mash with butter and milk until smooth. Season with salt and pepper.

Preparing the Sausage

Heat Oil

Heat the olive oil in a pan over medium heat.

Cook Sausages

Add the sausages and cook until browned on all sides, about 15 minutes.

Ensure sausages are thoroughly cooked to 165°F (75°C). Pro Tip: Slightly sear sausages to enhance smoky flavor.

Heat butter in a pan and add sliced onions. Stir in sugar and cook until caramelized, about 15-20 minutes.
