Ingredients

For the Feijão Tropeiro

Dried pinto beans
2 cups, soaked overnight
Olive oil
1 tablespoon
Smoked bacon
1 cup, diced
Onion
1, finely chopped
Garlic
2 cloves, minced

For the Collard Greens

Collard greens
1 bunch, stemmed and chopped
Olive oil
1 tablespoon
Salt and pepper
to taste

For the Egg Mixture

Eggs
3 large
Salt
pinch
Parsley
2 tablespoons, chopped

For Garnishing

Toasted manioc flour (farinha)
1/4 cup
Green onions
1/4 cup, chopped

Cooking the Beans

Drain and rinse beans

Drain the soaked beans and rinse them under cold water.

Boil beans

In a large pot, cover the beans with water and bring to a boil.

Simmer beans

Reduce heat and simmer until tender, about 1 hour. Drain and set aside.

Be careful not to overcook the beans; they should be tender yet firm. For added richness, cook the beans in chicken or vegetable broth instead of water.

Preparing the Collard Greens
