For the Potatoes

Russet potatoes
4 large, washed
Unsalted butter
4 tbsp, melted
Olive oil
3 tbsp
Salt and pepper
to taste

For the Garlic Butter

Garlic
3 cloves, minced
Fresh rosemary
1 tsp, finely chopped
Fresh thyme leaves
1 tsp
Parmesan cheese
1/4 cup, grated

For Garnishing

Fresh parsley
2 tbsp, chopped
Lemon zest
to taste

Preparation


Prepping the Potatoes

Preheat the oven

Preheat the oven to 425°F (220°C).

Slice the potatoes

Slice each potato thinly, about 1/8 inch apart, but not all the way through.

Use a ruler or a pair of chopsticks to ensure you don’t slice through the potatoes completely.

Arrange potatoes

Arrange potatoes in a baking dish.

Soak potatoes (optional)

If time permits, soak the sliced potatoes in cold water for 30 minutes to enhance crispiness.

Making the Garlic Butter

Melt butter

In a small saucepan, melt the butter over low heat.

Sauté garlic and herbs

Add minced garlic, rosemary, and thyme, and sauté for 1-2 minutes.

Do not overheat the garlic; it should stay golden and not brown.

Add olive oil

Stir in olive oil and remove from heat.

Cooking Process

Brush with garlic butter

Brush the potatoes with the garlic butter mixture, ensuring it gets in between the slices.

High heat (425°F/220°C). Initial bake 30 minutes.

Reinforce flavor

Halfway through baking, brush again with the garlic butter and sprinkle parmesan.

Final bake

Bake until the edges are crispy and the insides are soft, approximately 1 hour.

Final bake with parmesan 30-45 minutes until crispy edges and soft inside.
